Girolle season is approaching peeps! Mid to late summer when the ground is warm n damp. These princesses of the chanterelle family are my favourite mushroom by some distance! Fruity apricot aroma and staggeringly beautiful colour in any dish. Actually best gently sauteed in garlic with an egg dropped on top...bit of sourdough toast...boom!
